1 beet
2 carrots
1 and 1/2 cups of beef or chicken broth
1 chopped onion
2 cups of natural yogurt
Salt and chopped chives

Cook the beets and carrots separately in boiling salted water
Drain and chop into cubes
Put into a blender with the remaining ingredients, minus the chives
Blend until smooth
Adjust seasoning and refrigerate for four hours
Serve, garnished with chopped chives.
