Peel and chop a cucumber and add it to the blender along with a chopped scallion (a type of red onion with a strong flavor that resembles garlic; if you can't find it, substitute it with common onion), half cup of plain yogurt, one tablespoon of extra virgin olive oil, one-quarter teaspoon of dried dill (a member of the mint family known as anise or dill; it can be substituted with a few seeds of lovage) and a pinch of salt and black pepper
Blend until smooth, adding more yogurt as needed (one tablespoon at a time) to achieve the desired consistency.
