Wash the cucumbers thoroughly and cut a thin slice off one end
Scrape out any seeds with a spoon
Repeat the process on the other end
Cut the cucumber into thin slices and place them in a bowl
Peel the mango and remove the pit
Cut it into thin slices and add to the bowl
Squeeze lime juice over the vegetables and set aside
Mix the yogurt with salt, black pepper, and chopped parsley
Fold this mixture into the vegetables
Refrigerate for at least one hour before serving
Serve chilled, garnished with ice cubes if desired.
