1 cup all-purpose flour

250g ground beef
1/4 teaspoon black pepper
1 teaspoon salt
6 cups water
1/4 cup chopped fresh parsley
1 small onion, finely chopped
1/4 teaspoon ground cinnamon
1 tablespoon chopped fresh thyme

Sift the flour with the salt into a bowl
Make a depression in the center
Add the water gradually and mix with hands or a fork until a dough forms
Place the dough on a lightly floured surface and knead well
Place the dough in a bowl, cover with cloth, and let rest for 10 minutes
Place the ground beef in a bowl
Add the chopped onion, salt, and black pepper
Mix well
Divide the dough into several parts
Roll out on a lightly floured surface to obtain squares of about 30cm
Cut into smaller squares of about 3cm
Place 1 tablespoon of beef onto a square and cover with another
Fold the edges with a fork
Repeat the operation until all ingredients are used up
Boil water with salt, then add the noodles
Let cook for about 15 minutes or until cooked
Add the chopped parsley, cinnamon, and thyme
Add to soup a little before removing from heat
Serve with vinegar, to taste, or with yogurt.
