3/4 cup of ham (150g)

1 small carrot, peeled and grated
1 small onion, peeled and grated
500g of pork, cut into cubes
150g of prosciutto, coarsely chopped
2.5 liters of water
4 medium-sized potatoes (600g), peeled and sliced
Salt and black pepper to taste
1 tablespoon of chopped parsley
Parmesan cheese, grated to taste

Soak the ham in water for one day
Heat a large saucepan over medium heat with the olive oil, celery, carrot, onion, pork, and prosciutto
Fry the meat until it starts to brown, then add the water
Bring to a boil, cover, and simmer for 30 minutes
Add the ham stock, and let it cook for another 30 minutes or until the potatoes are tender
Season with salt, black pepper, and parsley
Serve hot, topped with grated Parmesan cheese.
