1/3 cup of large pineapple chunks

2 tablespoons of sugar
2 teaspoons of grated lime zest

Cut the pineapple into small cubes
In a pan, combine the water, sugar, and pineapple, and mix well
Bring to low heat and cook without stirring until the pineapple is very soft and a syrup forms
Remove from heat, then stir in the grated lime zest
Let cool for 10 minutes, then blend in a liquidizer and pour into a shallow container
Chill in the freezer until firm
Remove from freezer and whip with an electric mixer until creamy
Return to freezer for about an hour before serving
Use lime wheels to garnish.
