Cut the pineapple in half lengthwise, leaving the leaves intact
Remove the pulp without damaging the skin and refrigerate until serving time
Peel the lemons and remove any seeds or white pith
Chop the lemons into 4 pieces and blend with the pineapple in a blender or food processor
Mix together the water and sugar, then bring to a simmer over low heat
Simmer for 8 minutes, then let cool and add to the pineapple mixture
Pour into a freezer-safe container and freeze until firm
Thaw slightly, then beat again in a blender
Portion into serving dishes and refrigerate or freeze until serving time
Cover with plastic wrap and chill until firm
To serve, cut into large cubes and place in pineapple skins
Garnish with fresh mint leaves
Serve 6 portions.
