Mint syrup
Combine the water and sugar in a saucepan and bring to a boil over high heat until it starts to simmer
Reduce the heat and cook for 10 minutes
Remove from heat and let cool
Sorbet base
In a medium-sized bowl, mix together the mint syrup with the other ingredients
Pour into an ice cream maker, cover, and place in the freezer overnight
Mint sorbet mixture
Beat the mixture well in a blender until it forms a smooth, creamy consistency
Pour back into the ice cream maker, cover with plastic wrap, and let freeze for at least 3 hours or until firm.
