4 cups of water

4 cups of papaya puree (800g)
4 tablespoons of lemon juice
3 egg whites whipped in snow

Bring the water and sugar to a boil, stirring until the sugar dissolves and forms a syrup
Simmer for 5 minutes and reserve
Blend the papaya puree and lemon juice in a blender
Add the reserved syrup and let it cool
Place in the freezer
When partially frozen, add the egg whites whipped in snow and mix gently with care
Return to the freezer until firm, then serve
Raspe with a spoon and distribute on plates.
