In a saucepan, dissolve the sugar in the water over high heat
Wait for it to boil, then reduce the heat and let it simmer for 4 minutes
Strain and reserve the liquid
Puree the pears in a blender, add the liquid, egg white, and blend until smooth
Place the mixture in the freezer until the sorbet is firm
Remove and let it sit at room temperature for 30 minutes
Blend again in the blender and return to the freezer for an additional 30 minutes
Serve in bowls with a splash of orange liqueur, vodka or champagne.
