Rinse the corn and soak it in cold water for two hours
Transfer the corn and water to a pressure cooker and cook over medium heat for one hour
Remove from heat and let the pressure release

Drain the liquid and reserve
In a pan, mix together the corn, skim milk, whole milk, grated coconut, salt, and cornstarch
Heat over medium and stir occasionally until it thickens slightly
Remove from heat and sprinkle with cinnamon when serving
