About two hours before serving, sprinkle gelatin over 1/4 cup of cold water
Let it sit
Then, place the mixture in a double boiler and stir until the gelatin has dissolved completely
In a small bowl, dissolve the coffee in boiling water
Add the gelatin mixture to the coffee mixture
Beat the egg yolks until they thicken and turn pale yellow
Add the sugar and continue beating
Then, slowly add the coffee mixture, mixing well
Beat the egg whites until stiff peaks form
Fold them carefully into the previous mixture
Pour into a dish and refrigerate for at least 1 hour
Serve in 4 to 5 portions.
