2/3 cup sugar
2 1/2 cups water
1/2 cup lemon juice concentrate
1/4 teaspoon salt
2 egg whites

Cook the sugar and water over low heat for 10 minutes
Add in the lemon juice
Pour into an ice bath
Place in a freezer-safe container and freeze until partially frozen
Remove from the ice bath and transfer to a cold glass bowl
Beat well until light and foamy
Fold in the beaten egg whites tempered with 1/4 teaspoon salt
Freeze until firm.
