In a frying pan, place the sugar, heat it over low heat, and caramelize slightly
Add the butter or margarine, the warmed cognac, and ignite
Add the pear, orange juice, and lemon juice
Let it cook for a few minutes to reduce the liquid somewhat
Distribute the ice cream into 4 cups
Cover each cup with 2 halves of flambéed pears
