Heat the water with the sugar until it reaches a soft ball consistency
Beat the egg whites until stiff and slowly add to the warm mixture, whisking constantly until thickened
Add the crystallized fruits, vanilla, and whipped cream
Pour into a mold or individual cups and freeze
