To make the pudding, mix together the eggs, egg yolks, and sugar
Heat it in a double boiler to warm it up
After warming, beat it with an electric mixer until thickened (about 20 minutes)
Beat the heavy cream separately until stiff peaks form
Mix it with the previous mixture and add the croquant
Mix well
Pour it into a mold that can be opened and place it in the freezer
To make the croquant, melt the sugar over low heat until dissolved
Add the roasted chestnuts and coconut shavings
Mix well
Tie it from the heat and place it on a greased surface or large baking dish
Let it cool and harden
After that, pass it through a liquidizer or place it in a cloth and beat with an electric mixer until smooth
To serve, remove the pudding from the mold and cut it like a cake.
