Heat the can of evaporated milk in a water bath
In a separate bowl, whisk together the egg yolks, egg, and cornstarch; gradually add the warmed milk, whisking constantly
Place over low heat, stirring constantly, until the mixture thickens like cream
Remove from heat, let cool, then fold in the whipped egg whites and refrigerate for about 2 hours
Serve in 6 to 8 portions.
