In a mixing bowl, beat the egg yolks until light and fluffy
While that's being done, bring the sugar and water to a boil in a small saucepan
Stir occasionally until the sugar dissolves and the syrup comes to a simmer
Let it simmer for 3 minutes without stirring
Add the chocolate, remove from heat, and stir until melted
This mixture will be thick
Gradually add the egg yolks, beating slowly until smooth and creamy
Add the heavy cream in batches and mix carefully
Pour into a metal loaf pan or an ice tray
Cover with plastic wrap and place in the freezer until firm
Scoop after 8 hours.
