1 package of raspberry or strawberry gelatin
1 cup of boiling water
1 cup of sugar
2 eggs
2 cups of natural yogurt

2 cups of natural yogurt
Place the gelatin in a medium-sized bowl
Pour the boiling water over the gelatin and stir until it dissolves
Add the sugar and stir again to dissolve
Let it cool slightly, then whisk in the eggs in a separate bowl until they thicken
In low speed, continue whisking and slowly add the yogurt and gelatin mixture
Pour into a 21x17 cm glass mold
Place in the freezer for about 3 hours or until the mixture is partially frozen
Remove from the mold and place in a serving bowl
Whisk in low speed for about 30 seconds until it's creamy but not fully thawed
Do not over-whisk!
Cover and refrigerate for 1 to 2 hours, until semi-frozen
Serve in 8 portions
If you're making the popsicles ahead of time, remove them from the freezer 1 1/2 hour before serving, letting them come to room temperature
If desired, serve with ice cream.
