In a bowl, mix together the papaya, sugar, and lime juice
Beat the egg whites until firm and fold them into the papaya mixture gently
Pour into an ice cream mold that's not too deep and place in the freezer for at least one day
Remove from the freezer 20 minutes before serving and scrape with a spoon
Serves 6 people.
