5 cups fresh watermelon juice
2 cups sugar

Soak the gelatin in 1/2 cup of cold watermelon juice
Let it sit for a few minutes to soften
Heat the remaining watermelon juice until it's simmering
Add the sugar and stir until it's fully dissolved
Combine the softened gelatin with the warm watermelon mixture, stirring until fully incorporated
Let it cool to room temperature
Add the freshly squeezed lime juice and enough red food coloring to achieve a pink color
Place the mixture in an ice bath or freezer until it's slightly frozen
Whisk in the egg whites until they're well combined and frothy
Pour the mixture into a cold metal bowl or a 9x13 inch baking dish and refrigerate until firm
Serve chilled.
