In a bowl, combine the strawberries, sugar, lime juice, and half of the gin
Season with cayenne pepper
Use a fork to mash the sorbet with the remaining gin and join it with the seasoned strawberries
Beat the heavy cream rapidly until it starts to thicken
Add it to the sorbet and mix lightly
Serve immediately.
