Gently whip the heavy cream, season with salt and black pepper, then add the Parmesan cheese and finally the beaten egg white
Place in a small shallow dish
Refrigerate until set
When serving, dip the dish into boiling water
Invert onto a platter and serve immediately, accompanied by buttered crackers
