1 ripe banana or banana puree

4 tablespoons lemon juice
1 cup sugar
1/8 teaspoon salt
2 egg whites whipped to snow or light and airy chantilly cream

Pulse the banana and mix in the lime and orange, then blend in a liquidizer
Place in the freezer until it partially freezes
Whip the egg whites to snow, or make a recipe for Light and Airy Chantilly Cream (follow)
Gently combine the cold fruit cream with the whipped egg whites (or Chantilly) and place back in the freezer
Note: - this popsicle is incredibly simple, allowing infinite variations using the fruits you have on hand, always placing the fresh fruit creams over the cream (or whipped egg whites)
