Cut the pineapple in half lengthwise, starting from the crown, leaving a little leaf on each side
Remove the pulp without damaging the skin
Let the halves sit upside down to drain
Discard the core and cut the pulp into small cubes
Place it in a strainer and let it drain for 5 minutes
In a bowl, mix the drained pineapple chunks with the liqueur
Inside the pineapple shells, alternate layers of sorbet and chopped pineapple, finishing with the pineapple
Cover with plastic wrap, put in the freezer until the sorbet is firm
Remove at serving time and garnish with cherries, if desired
