In a large bowl, beat the eggs and then add the flour
Mix until the dough is smooth and homogeneous
Dissolve the salt in water and gradually add it to the dough to obtain a consistency suitable for passing through the spätzle maker
Fill three-quarters of a large pot with boiling water, a thread of oil, and salt to taste
Let it simmer
Keep a kettle of boiling water nearby to replenish the pot
Fill the spätzle maker with the dough and let the noodles fall into the boiling water in small quantities
When the noodles rise from the bottom of the pot, they are cooked
Remove each noodle with a skimmer and separate them on a platter
Repeat the process to cook all the dough
Heat the oven to a warm temperature
Assemble a platter by alternating layers of spätzle and grated cheese
Top it off with the caramelized onion
Cover with aluminum foil and bake for about 15 minutes
Remove from the oven and lightly drizzle with white vinegar (to remove the flour taste)
Stir gently and serve with a crustacean sauce or another condiment of your preference.
