In a saucepan, melt the butter, then whisk in the flour and cook over low heat for 5 minutes
Add the warm milk, whisking vigorously with a wooden spoon
Next, add the grated cheese and whisk until smooth, cooking over low heat
Remove from heat and gradually beat in the egg yolks
Stir in the orange-flavored liqueur or Grand Marnier
Cover with plastic wrap and let cool
While the mixture is cooling, whip the egg whites in a large bowl until frothy
Add the baking powder and continue whipping until stiff peaks form
Fold one half of the whipped eggs into the cooled soufflé base, then gently fold in the remaining whipped eggs
Reserve 1 cup of this batter for the top layer
To bake, place the mixture in a buttered 9x13-inch baking dish and smooth the top
Place the reserved batter on top and smooth with a knife or spatula
Bake at 375°F (190°C) for 15 minutes, or until puffed and golden brown.
