1/4 cup of cold water
3 separated eggs
a tablespoon of grated lime zest
2 tablespoons of pineapple juice
1/2 cup of sugar
1/4 teaspoon of salt
2/3 cup of crushed pineapple in syrup
1/2 cup of whipped heavy cream

Soak the gelatin in cold water for 5 minutes
Beat the egg yolks lightly and add the grated lime zest, pineapple juice, sugar, and salt
Cook over low heat, stirring constantly, until the mixture thickens
Add the gelatin and stir until dissolved
Mix in the crushed pineapple and let it cool
When the mixture starts to firm up, carefully fold in the whipped heavy cream and beaten egg whites
Pour into a mold and refrigerate
Afterward, unmold and garnish with pineapple slices
