Mix the potato, butter, milk, cheese, and salt well. Reserve
Sauce:
In a pan, combine the flour, butter, and whisk to incorporate
Avoid overheating; slowly add the hot milk and cheese while whisking continuously until thickened
Add the salt, pepper, and nutmeg, then let it cool slightly
Mix in the egg yolks well
Fold in the stiffly whipped egg whites gently
Pour the mashed potato mixture into a large buttered dish, followed by half of the mozzarella cheese
Top with the remaining mashed potato mixture and the rest of the mozzarella cheese
Dust with grated cheese and bake at 200°C until golden brown.
