Butter a 25 cm diameter low-refractory dish
Boil the peeled potatoes in hot water with salt until they are tender
Drain and mash the potatoes
Fry the onion in butter or margarine until it softens
Add the mashed potato and mix well
Fill half of the dish with the potato cream
Spread the cheese on top and cover with the remaining cream
Bake at moderate heat (170°C) for 20 minutes
Serve hot.
