Preheat the oven to 350°F (medium)
Grease eight small ramekins with butter and dust with sugar. Reserve
In a medium saucepan, melt the butter over high heat
Add the wheat flour and mix until smooth (approximately 1 minute)
Add the milk and cook, stirring, until thickened (approximately 2 minutes)
Add the vanilla essence and 2 tablespoons of sugar, mix, and remove from heat
Let cool for about 5 minutes
Add the yolks, beating constantly with a spoon. Reserve
In a stand mixer, beat the egg whites until soft peaks form
Gradually add the remaining sugar, beating until stiff peaks form (approximately 2 minutes)
Add to the reserved mixture and mix gently with a spoon
Distribute this mixture among the prepared ramekins and arrange in a large baking dish
Bake in the preheated oven until golden brown (about 25 minutes)
Dust with sugar and serve
