Melt the butter or margarine and whisk in the flour; mix well
Add the milk and whisk until smooth
Cook over low heat until thickened
Add the chicken and remove from heat
Beat the egg whites until stiff and fold gently into the chicken mixture
Season with salt to taste
Pour into an ungreased 1 1/2-liter baking dish and bake in a moderate oven for 10 minutes
Increase the oven temperature and bake for an additional 20-25 minutes
Serve immediately, accompanied by cheese sauce and salad if desired; serves 4.
