1 1/2 cups of cold heavy cream (360ml), chilled

Preheat the oven to 250°C (very hot)
Grease a 17cm diameter mousse mold with butter. Reserve
In a stand mixer, beat the egg whites until stiff peaks form (approximately 3 minutes)
Add the jelly and lime zest and mix gently until well combined
Transfer to the reserved mold
Reduce oven temperature to 180°C (medium) and bake the mousse until lightly golden (about 10 minutes)
Serve immediately with cold heavy cream
