Preheat the oven to 200°C

Grease the soufflé dishes with butter and dust with confectioner's sugar. Reserve

In a small bowl, mix well the lemon juice and half of the confectioner's sugar

In an electric mixer, beat the egg whites until stiff peaks form
Add the remaining confectioner's sugar and salt and continue beating until firm peaks are achieved

Fold in the lemon mixture with a spatula

Pour the mixture into the prepared soufflé dishes and bake for 10 minutes or until risen and lightly golden

Remove from the oven, dust with confectioner's sugar on top, and serve immediately.
