Bring the milk to a simmer and let it cool slightly
Gradually add the milk to the flour, stirring constantly until the mixture is smooth and lump-free
Season with salt, pepper, and nutmeg to taste
Let the mixture come to a boil while stirring constantly
Remove from heat and immediately combine with grated Parmesan cheese, butter, and egg yolts diluted with 2 tablespoons of milk
Beat the egg whites until stiff and add them carefully to the previous mixture
Pour the mixture into individual soufflé molds and bake in a moderate oven for 25-30 minutes
Serve hot.
