1 cup of milk

Separate the egg yolks from the whites

Melt the butter, add the flour and mix well
Add the milk, paprika, and season with salt
Cook, stirring, until thickened
Add the cheese and parsley and mix
Remove from heat, add the egg yolks and beat vigorously

Preheat the oven to a low temperature
Beat the whites until snowy and add to the previous mixture
Pour into the soufflé form and place on a hot water bath
Bake for 35 minutes or until firm and golden
Serve immediately.
