Melt the butter
Combine the flour and mix well
Add the milk gradually, stirring constantly
Cook until thickened and smooth, about 5 minutes
Remove from heat
Add the salt, pepper, and beaten egg yolks, mixing well
Add the grated cheese
Place over low heat and cook, stirring constantly, until the cheese is fully melted
Let cool for 15 minutes
Preheat oven
Beat the egg whites until fluffy
Gently add to the cheese mixture
Pour into a buttered 1 1/2 liter soufflé dish
Decorate with grated cheese strips
