Micely crush the candied fruits and let them sit for an hour in a little liquor
Make a white sauce with butter or margarine, flour, and milk
Add half of the sugar, then the egg yolks and liquor, stirring well
Beat the whites until stiff with a pinch of salt
Gradually add the rest of the sugar while continuing to beat
Gently mix in the whites with the mixture
Pour half of the candied fruits into a well-greased mold
Bake in a moderate oven for 2 minutes
Quickly pour the remaining candied fruits on top of the soufflé and close the oven door immediately
Let it cook for another 15 minutes in a moderate oven
