3 cups (about 1 pound) diced zucchini
1 cup water
4 tablespoons olive oil
1/2 cup finely chopped onion
1 cup crushed tomatoes
4 eggs
3 tablespoons grated cheese
2 tablespoons breadcrumbs
Salt to taste

Cook the zucchini in salted water until it's tender but still firm, then strain and reserve
Heat the olive oil and sauté the onion and tomatoes until they're soft
Beat the eggs and add the grated cheese
Add this mixture to the pan, stir well, and add the cooked zucchini
Correct the seasoning and remove from heat
Let it cool, then fold in the beaten egg whites
Pour into individual buttered and floured molds
Bake in a medium oven.
