2 cups of lentils
4 tablespoons of olive oil
2 onions, thinly sliced
2 cloves of garlic, minced
300g of cherry tomatoes, cut into four pieces
200g of white cheese, cut into cubes
1/4 cup of balsamic vinegar
1/4 cup of red wine
Salt and pepper to taste
Chopped parsley to taste

Cook the lentils in water with salt until tender, being careful not to break them apart
Heat the olive oil in a pan and caramelize the onion slices well
In a salad bowl, combine the cooked lentils, onion, garlic, tomatoes, and cheese
Season with balsamic vinegar, red wine, salt, pepper, and parsley
Serve immediately.
