3 tablespoons of butter or margarine
4 tablespoons of all-purpose flour
3/4 cup of whole milk
1 1/4 cups of grated cheddar cheese
1/4 cup of sherry wine or madeira
Salt to taste
1/2 teaspoon of Worcestershire sauce
3 eggs (separated whites and yolks)
3 tablespoons of butter or margarine

Precare the medium oven (170°C)
In a pan, melt the butter or margarine over low heat and add the all-purpose flour
Add the milk gradually and mix until a thick and smooth batter forms
Combine the cheese and wine, and continue mixing over low heat until the cheese melts
Season with salt and Worcestershire sauce
Remove from heat, add the yolks, and beat well
Mix slowly the seasoned cheese cream to the beaten whites in a snow-like consistency
Pour into 4 individual glass baking dishes and bake for 30 minutes or until firm
Serve immediately.
