Cut the beef into thin strips with a sharp knife
In a medium bowl, combine soy sauce, Madeira wine, and ginger
Add the beef and mix until well coated
Cover and refrigerate for 1 hour or overnight
Stir occasionally
Prepare remaining ingredients, cover, and refrigerate
About 15 minutes before serving, heat the sesame oil and quickly sear the beef strips
Push the beef to one side
Combine remaining ingredients, except spinach, and fry each vegetable without stirring
Let it simmer slowly for 5 minutes
Arrange everything on a platter, leaving space in the middle for the spinach that should be fried quickly at the end with the beef seasoning
Spoon the beef seasoning over all the ingredients on the platter
Serve 4 portions per serving, each approximately 370 calories.
