Place the gelatin in a small saucepan and add water
Heat, stirring constantly, until dissolved well
Remove from heat and mix in cut cherries and compote
Pour into a baking dish or rectangular mold (approximately 26 x 16 cm) and refrigerate until firm
Cut into cubes and arrange on plates, topping with the following sauce: mix all ingredients (except lemon juice)
Blend in a blender and pour into a saucepan
Heat, stirring constantly, until thickened
Remove from heat and add lemon juice
Stir well and blend again in a blender
Let cool to use, serving 6 portions.
