Mix the sugar with 1/2 cup of water
Bring to a boil over high heat, without stirring, for about 4 minutes until it reaches the soft ball stage
To verify the stage, place some of the syrup in a bowl with cold water and form a ball with your fingers
It should lose its shape without resistance
Beat the egg whites until fluffy
Gradually add the warm syrup
Beat well until cooled
In a large bowl or individual bowls, layer the meringue pudding in alternating layers of meringue, orange, and coconut
Chill in the refrigerator until serving time
