Mix the sugar, gelatin, and salt well
Heat the passion fruit juice to a boil, add the gelatin, and stir until dissolved
Add the remaining juice and lime juice
Pour 3/4 cup of the mixture into a liter-and-a-half mold and let it chill until firm
Let the rest of the mixture cool down
Add the unbeaten egg white
Let it chill until partially firm and then whip until light and fluffy
Add the whipped heavy cream, stirring constantly
Pour over the first layer of gelatin
Chill until firm
Remove from the mold and garnish with a sprig of mint and frozen fruit slices
Serves 6 to 8 portions.
