Lemon Cream
7 Eggs
1 Egg
1 1/2 cups (cup) of Sugar
3/4 cup (cup) of Lime Juice
3/4 cup (cup) of Margarine Cut into Cubes
2 Cups (cup) of Fresh Whipped Cream
1 Can of Guava Jam in Syrup

3/4 cup (cup) of Lime Juice
3/4 cup (cup) of Margarine Cut into Cubes
2 Cups (cup) of Fresh Whipped Cream
1 Can of Guava Jam in Syrup
1 In a saucepan, combine the eggs, egg, sugar, lime juice, and margarine, whisking constantly
Cook over low heat for three minutes after bringing to a boil
Remove from heat and transfer the saucepan to an ice bath
After cooling, cover the surface with plastic wrap and refrigerate
2 Whip heavy cream until stiff peaks form
Layer individually in glasses alternating layers of guava pulp, lime cream, and whipped cream
Serve chilled, garnished with lime zest.
