4 ripe strawberries
1 cup sugar
1/4 cup water
6 eggs
1/4 cup orange liqueur (Curaçao, Cointreau or Grand Marnier) or rum
Sauce:
1 cup cleaned strawberries
1/4 cup sugar
1 cup sliced strawberries
1 to 2 spoons of orange liqueur or rum

For the cream: Remove the pits, clean and slice the strawberries into wedges
Strain through a sieve
In a saucepan, mix sugar with water
Let it boil over medium heat in a covered pan
Remove the lid and cook vigorously, stirring until sugar dissolves
Add strawberry puree and cook for 25 more minutes
In a bowl, beat eggs well
Gradually add strawberry puree, beating until chilled
Add liqueur or rum
For the sauce: strain 1 cup of strawberries through a sieve
Mix with sugar
Place in a saucepan
Add sliced strawberries and let it boil
Remove sliced strawberries with a skimmer
Cook the puree until slightly thickened
Add liqueur and mix with sliced strawberries, then refrigerate
Serve in tart shells (the cream sandwiched with the sauce)
Serves 6.
