In a large bowl, place the tapioca starch, adding water gradually until it forms clumps
Press the mixture through a fine-mesh sieve, using your fingers or a spoon
Without stirring, add 2-3 tablespoons and a half of the tapioca mixture to a medium-sized non-stick skillet
Spread the mixture out delicately to form a pancake
Over low heat, let the pancake cook for two minutes and then flip it, cooking for an additional minute
Filling
In a separate pan, heat the olive oil
Cook the onion until golden brown, then add the tomato and linguica sausage, chopped into small pieces
Add salt to taste and simmer for three minutes
Fill the tapioca pancake, fold it in half, and serve.
