1 1/2 cups of fresh heavy cream
1/2 cup of mayonnaise
1/2 cup of dry white wine
3 tablespoons of freshly squeezed lime juice
350g of fresh tuna, cleaned and cut into small pieces
4 allspice berries
Salt and pepper to taste

Place the tuna in the freezer until it is slightly congealed
Cut it into very small cubes and reserve
Heat the white wine with the allspice berries in a small saucepan for a few minutes
Remove from heat, reserving the allspice berries
Mix 1 tablespoon of the warm wine with the mayonnaise
Mix well with the tuna and season with salt and pepper to taste. Reserve
Form small mounds with this mixture and place them on plates
Beat the heavy cream with the lime juice until it is well combined, then spoon it around the tuna and garnish with allspice berries
Serve immediately.
