3 chicken breasts cut into strips
2 eggs, lightly beaten
salt and black pepper to taste
3/4 cup all-purpose flour
1/2 cup grated Parmesan cheese
1 can tomato sauce
1/4 teaspoon dried oregano
1/8 teaspoon garlic powder
1 tablespoon butter or margarine
240 g mozzarella cheese, cut into triangles

Place chicken strips on a meat plate and beat until they're 0.5 cm thick
In a bowl, mix eggs, salt, and black pepper
Pass chicken strips through this mixture and then coat in flour
Heat oil in a skillet and fry chicken strips on both sides until golden brown
Remove chicken from the skillet and arrange it in a baking dish
Remove excess oil from the skillet and add tomato sauce, oregano, and garlic powder
Cook over low heat for 10 minutes, or until slightly thickened
Add butter or margarine, stir well, and pour this sauce over the chicken
Sprinkle with Parmesan cheese and place in a moderate oven (170°C) for 30 minutes with a lid
Remove the lid and arrange mozzarella triangles over the chicken
Place in the oven for another 30 minutes, until the mozzarella is melted
Serve 6-8 portions
